  • 7 large carrots
  • 7 tablespoons coarse meal
  • 2 tablespoons semi-fat or full-fat cottage cheese
  • 2 eggs salt
  • garlic [25
  • A few basil leaves
  • Chives

Scrape the carrots with a knife or scissors and wash. Grate them on a coarse grater in a large bowl and add coarse flour, about 3 pinches of salt, 2 eggs, and 2 tablespoons of cottage cheese. The cottage cheese will make the batter taste milder and stickier, making the pancakes easier to form. Next, crush or finely chop a clove of garlic. Mince the basil leaves and chives as well. The herbs give the pancakes a spicy flavor. Mix everything well.

Spoon the carrot batter onto the hot oil in a frying pan to make patties (2 to 3 tablespoons per patty). Place the finished patties in a casserole or covered dish and allow to cool before serving for lunch.

As a side dish, carrot pancakes are served with boiled potatoes, buttered and sprinkled with parsley, chives, and dill. However, good bread will suffice as well. Pickles and mayonnaise or tartar sauce can be served on the side. In the unlikely event that there are any pancakes left over from lunch, it won\’t happen often, as they will soon be gone.
